Can we make changes to our chart of accounts during onboarding?

Answer:

It is advised that your team does not make any changes during the conversion process.

Assessment setup stems from the model chart of accounts. You'll set up Assessments on the model and then be able to copy them across to associations (and then make association-specific changes). Changing the GL's would cause confusion and make auditing more difficult. It would be in your best interest to save any GL changes until after your Go Live date!
